Salvia Small Talk: Sage & Potato Soup

On chilly evenings, hot sage-scented soup fills the air with the fragrance of Autumn and provides a healthy, filling meal. Beatrice Peltre of The Boston Globe combines sweet potato, Yukon Gold potatoes, leeks, parsnips, turnips and a variety of herbal seasonings, including fresh Sage to create a creamy potage. She says you can top it either with yogurt or creme fraiche. If you feel like adding your own touch to the recipe, consider trying Salvia fruticosa (Greek Sage) fresh from your garden. It's actally the primary kitchen sage used worldwide versus Salvia officinalis.
