In her e-book Cooking with the Seasons: Fall/Winter Edition, vegetarian Christy Morgan describes how to make a savory croquette-style patty of tofu, sautéed vegetables, walnuts, bread crumbs, brown rice and nutrition boosters including flax meal. Morgan adds a half-cup of chopped fresh Sage, tamari and other seasonings. The patties can be oven-baked or pan-fried. Morgan serves them at Thanksgiving. Here is Morgan’s recipe.
